

It is one of the few, and possibly the only Italian cheese containing no salt. It is strongly characterized by the tall cylindrical shape of its wheel, as well as the presence of small regularly-sized eyes evenly distributed throughout its white paste. Its taste and aroma are also quite remarkable: sweet to start with, before becoming slightly bitter, making it a rather unusual and special gourmet experience. In fact, it is often served with honey, fruit preserves and chutney, whilst it is excellent when paired with anchovies or used in risotto and salads.
